Red Pepper Jelly

This Red Pepper Jelly are both beautiful and tasty. Often served at the holidays with specialty crackers and cream cheese, it is a treat any time of the year. When preserved in small decorative jelly jars, it makes a prefect gift for family and friends.

Mix the peppers, sugar, apple cider vinegar and Cayenne is a pot and bring to a rolling boil. Remove from heat and allow to cool for 15 minutes. Add the lemon juice, stir, and cook for an additional 2 minutes. Remove from heat, add the Certo, and stir occasionally for 5 minutes. Decant into sterilized canning jars. We typically use pint-sized, but small jelly jars are also a good option if you are gifting.

Note that where Mom concludes with, “Put Into Jars,” it is understood to mean that you then process as you would any jam or jelly. That is, in sterile jars, in a boiling water bath, for ten minutes, etc. If you are new to home canning of food, check with your local agricultural extension agent for more information. Additionally, any favorite, red sweet pepper can be substituted for Bell-type peppers. We actually prefer to use heirloom sweet peppers like ‘Neapolitan’ or ‘Hajduczek’ whenever possible.
